LOKAL works to bring delicious food to Williamsburg for a reasonable price.   By working within the system of food production and investing in technology that enhances our capability to preserve food, LOKAL is balancing the needs of a successful business, with meeting the requests of our customers while paying an appropriate amount to our farmers.

There are many products that cannot be grown or produced locally.  For those products we focus on locating ones that taste the best.  Our goal is to use organic when it is available (mangoes and bananas for example) fresh.  If not fresh, then frozen.  If we cannot find the taste or the quality, we won’t have it on the menu.


Vegetables, Fruit and Grains

Working with local farmers has many rewards.  Getting to know their farms, their crops and how the seasons affect them, LOKAL becomes not only a buyer of the products, we also become a partner.  When a farmer thinks about what crops to grow, they consider what their soil and environment grows well and with good yield as well as the potential market for each product.   No farm can afford to grow something that will not be sold.  For a small farmer, maximizing the number of products sold and minimizing the products wasted is the only way for them to make enough money to keep the farm profitable. 

LOKAL discusses early in the year what they would like and use.  We specify what we will use during the year and how much we need.  We have specific set of vegetables and fruit we will use in our soups, salads and gelato.  So for many farmers, they can optimize what they grow for us.  Additionally, we don’t need only, beautiful, market ready products. 

We love our blemished vegetables and fruit!  We want healthy nutritious food, not food that wins beauty contests on a supermarket shelf.  Our farmers make more money selling their unblemished fruit in the farmer’s markets around Hampton Roads.  But they have a hard time to sell their “B” grade products.  LOKAL is very good at cleaning this fruit and getting it ready for use or preservation.

Hand Crafted Gelato and Sorbet

Rediscover the taste of gelato

Gelato is a speciality of Italy.   In the old days, it was made honestly with locally sourced products and reflected the season and the taste of he local countryside.  Today, it is a rare art.  Yes there are gelato shops all over Italy just as there ice cream shops all over the United States, but these gelatos and ice creams are mostly made in large corporate factories or if it made on-site, the flavor comes out of a box and blended with the cheapest milk available.  This is not the way LOKAL makes their gelato and sorbet.

Rediscover The Taste of Milk

At LOKAL, we use full fat milk from Old Church Creamery.  This is a unique milk that tastes like milk.  Most of us have forgotten what that tastes like.  It is also a healthy milk from a small herd of Jersey cows located in Mechanicsville. We make a flavor called Fiore di Latte that is the base flavor for a majority of our gelato.  This is simply made with milk and organic cane sugar.   To make it as healthy as possible, we do not use cream or eggs in our gelato.  This makes our gelato lower in fat than ice cream.  To help make our gelato very smooth we add in two products.  The first is organic inulin from agave plants.  Without the cream or eggs, we add this to provide more fullness to the gelato.  Inulin is also a pre-biotic that supports a healthy gut-biotome.  To replace the binding qualities of the egg, we use a small amount of locust bean powder.  This is an emulsifier that is used in many healthy, glutin-free products.

Yes, we still have yogurt

Working with Old Church Creamery we use their yogurt to make a gelato textured, frozen yogurt.  Many customers like the tangy flavor of yogurt.   This yogurt is a full fat yogurt.  Most froyo is lower fat and higher sugar, predominantly, corn syrup.  We work to reduce the sugar in our yogurt to keep the calories down and the flavor intense.

Not Just Dairy…

We also make delicious sorbets from vegetables and fruit as well as creamy, non-dairy nut butter and seed gelatos.   Sorbet is sugar and vegetables or fruit.  It is very simple.  We also use various herbs and spices to enhance the flavor of our products.  Nut and seed milk is made from soaking nuts and seeds in filtered water, blending it, and draining the milk from the solids. 

High tech gelato…NO PIECES OF ICE!

Gelato and sorbet are made by combining sugar and milk or sugar and fruit in large quantity batches.  It is then frozen in an ice cream machine where air is introduced.  If it is not made precisely, it will form ice.  No one likes ice chunks in their ice cream.  Our process takes this many steps further and eliminates ice.

We make small, one liter batches in individual stainless steel containers.  The container is placed in a high speed blast freezer and frozen within an hour.  When frozen, the container is then processed to turn it into a creamy, intensely flavored dessert.  We only process the gelato when ordered or on busy days within the last 4 hours.  So our gelato and sorbets are always fresh.  They have never been shipped in a truck or sat out in a display for days on end.



Coffee and teas are not local products for Williamsburg.  But there are expert coffee roasters and tea masters within 10 miles of LOKALWe work with these experts to identify coffees and teas from small farmers from around the world.  We are happy to explain where our coffee and tea comes from and look forward to sharing these unique cups with you.
